They are so simple and quick to make… everyone gets what they like and the kids can even make their own! You do not need much filling on a pizza to make it taste really sensational.

Ingredients:
For 1 Mini pizza
IGA Signature Extra Virgin Olive Oil Spray
1 IGA Signature Pizza Base
1 cherry tomatoes quartered or sliced
1/4 cup IGA Signature Mozzarella cheese, divided into half
ground black pepper
2 fresh basil leaves, torn
Other extras – olives, ham sliced into strips, mushrooms, capsicum, artichokes, cabanossi or other salami, pineapple
Method:
1. Get ready: Preheat oven to 220°C.
2. Add topping: Spray pizza base with olive oil then sprinkle half the cheese over the crust. Top with tomato pieces and Add olives or any other extras as you like, then remaining cheese, and sprinkle with pepper.
3. Cook: Bake directly on oven rack for 10 minutes or until crust is crisp and cheese is melted.
4. Serve: Sprinkle pizza with basil before serving.
Swaps:
• Vary the toppings using ingredients you already have, or try these:
• Cream cheese topped with smoked salmon trimmings. Bake, then scatter with rocket
• Spread basil pesto over each pizza instead of Olive oil.
• Buy a bbq chicken and use some of the meat, shredded, with some bbq sauce
To Serve:
Make a simple green salad to make it a meal, otherwise hand out paper table napkins and you have a no mess party!
